Southern Fried Corn
2 cups fresh corn kernels, about 6 ears
2 tablespoons butter, or use part bacon drippings
1/4 cup milk or half and half
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Clean fresh corn removing all of the silks. Wash and cut off kernals, then scrape with back of the knife to get all of the milk out. In a heavy skillet, heat butter (or bacon grease) over medium-low heat until hot. Add the fresh corn with the milk; cook for 20 minutes, stirring frequently. Lower heat if necessary to keep butter from burning. Sprinkle with the salt and pepper. Taste and adjust seasoning, and add about 1 teaspoon of sugar if desired. Serves 4.
