MARYLAND CRAB SOUP
A mix of hearty vegetables and fresh lump crabmeat, then the smell of blue crabs and Seafood Seasoning fill the entire house. This recipe serves ten loved ones.
1 medium chopped onion
1 teaspoon of Extra Virgin Olive Oil
1 can (28 ounces) tomatoes cut into small pieces
3 cups water
2 cups beef broth
1 cup lima beans, frozen
1 cup baby carrots, sliced
1 cup yellow sweet corn - fresh or frozen
1 ½ cups diced potatoes
1 tablespoon OLD BAY® seasoning or Old Savannah Seafood Seasoning
1 pound crabmeat
In a large pot - sauté onion in Extra Virgin Olive Oil until slightly translucent. Combine tomatoes, water, broth, potatoes, lima beans, carrots, corn, onions and OLD BAY in same large pot as onions.
Bring to boil on medium heat. Reduce heat to low. Cover and simmer 5 minutes. Add crabmeat. Cover and simmer 10 minutes
1 6oz. package of "HUSH PUPPY" Mix (according to package directions)
1 large egg
2 cups sliced fresh okra (OR) frozen, defrosted
1 small onion, minced
Salt and Cayenne pepper, to taste
1 small jalapeno - finely diced
Vegetable oil for frying
How to make it
Mix Hush Puppy mix according to package directions.
Add okra, minced onion, jalapeno, salt and cayenne and mix well.
In a skillet heat the oil and drop the Hush Puppy mixture
1 Tbsp. at a time, frying like pancakes until golden brown.
Drain on paper towels.
