Pork Tenderloin w/Apple Stuffing
Olive oil T
Medium Onion 1 chopped
Celery 3 stalks, sliced
Medium Apple chopped with skin
Panko Crumbs 12 oz
Chicken or Vegetable Stock 2-4 C
Method: In sauté pan, pour olive oil thinly filming the bottom of the pan. Saute onion, celery, and apple. Add seasoning, cookinguntil fragrant. Add panko, and 2 cups stock...(add more stock if moister stuffing is desired). Place in a bowl allow to cool. Butterfly Pork tenderloin, spread with stuffing, tie or put cut end up -put in aluminum foil, roast for 30 minutes.
