Avocado Chicken Salad

10-12 oz chicken (shredded)

1 cup fresh diced peaches

1 cup chopped red grapes

1/2 avocado

1/4 cup coconut or almond milk

3-4 tbsp balsalmic vinegar

Grill or boil chicken and shred.  Blend avocado, balsalmic vinegar and coconut milk in blender or food processor.  combine all ingredients and chill.

Makes 4 servings                                                                      185 calories per serving                                                      Protein= 17.5 grams                                                            Carbs= 17 grams                                                                      Fat= 5 grams

Serve on top of celery, cucumbers, or tomatoes.  Loaded with even more nutrients.
