Sun Kissed Potato Salad

3 pound Yukon gold or a mixture of your favorite potatoes

4 sun dried tomatoes in oil, drained and chopped

¼ cup crumbles feta cheese

5 cups spinach or lettuce of your choice

2 T balsamic vinegar

¼ cup olive oil

1 tsp salt

Ground pepper to taste

Place potatoes in a saucepan, cover with water bring to a boil. Reduce heat and simmer 20 minutes or until tender and drain. Refrigerate until cool. Cut potatoes into quarters and place in a large bowl, add cheese, sun dried tomatoes, and spinach or lettuce. Combine vinegar, oil, salt and pepper in a small bowl then add to salad and mix.
