She Crab Soup
Servings 4

Butter-3 TBS
Flour-3 TBS
Worcestershire Sauce-1 tsp
1 tsp Paprika
1 tsp lemon juice
Dry Sherry-2 TBS
Milk- 1 Cup
Heavy Cream- 1.5 Cups
1/2 Pound Crab Meat

1. Melt butter over medium heat. When melted add flour and mix well. Cook until mixture becomes light brown.
2. Add Milk and Cream. Mix well.
3. Add Worchestershire sauce, paprika, sherry and lemon juice. Stir well and let soup thicken on low heat stirring often.
4. Add fresh crab meat and gently stir into soup.
5. Serve soon after adding the crab.
