EASY COOKIE BROWNIE
1 (1 lb 1.5 oz) package peanut butter cookie mix
2 cups quick 1 minute oatmeal
1 egg, beaten
½ cup heavy whipping cream
1 tablespoon vanilla butter and nut flavoring
? cup mini chocolate chips
? cup walnuts, chopped
½ cup shredded coconut (optional)
Preheat oven to 400° F. In a large bowl, combine cookie mix, oatmeal and set aside. In a small non-stick sauce pan, combine beaten egg and whipping cream. Cook over low heat, continuously stirring, and cook until mixture starts to boil. Remove from heat and add flavoring.
Pour egg mixture into dry cookie mixture. Using a fork, mix until well blended. Add chocolate chips and walnuts; stir well. Divide cookie mixture in half and pour mixture into two 9-inch glass pie dishes. Press cookie mixture into pie dish with hands. Bake for 15 minutes or until edges start to brown.
Remove from oven and let stand 5 minutes before slicing. Can serve hot with ice cream or cooled.
Note: Mixture can be divided, press one half into glass pie plate and bake. For second half: add ½ cup coconut flakes; mix well. Spoon out 1 tablespoon of mixture and roll into balls; place onto tray. These do not have to be baked, as eggs have already been cooked. Place in an airtight container.
