Bill Sirmon's Shredded Yams

2 pounds raw yams or sweet potatoes
1 tablespoon table salt
1 gallon water
1 (maybe a little less - it depends on your taste) cup granulated sugar
1/2 cup white corn syrup
1/2 cup water
1/4 cup butter (or margarine)
1 cup pineapple juice

Preheat Oven to 350 Degrees F. Peel and shred yams. Really shred using grating disc on food processor or the old standby knuckle buster grater over a bowl (don't grind or chop - it really matters). Add with salt to 1 gallon water. Wash and drain yams and then put them into baking dish or shallow pan. In a small saucepan, mix sugar, syrup, water (or do it in a large measuring cup in your microwave). Cook until it thickens somewhat and a simple syrup forms. Add butter or margarine. Pour pineapple juice over yams and add the simple syrup. Place in oven and bake until yams are transparent, about 45 minutes to an hour. Serve hot (of course).
