Linda Cannon's "To Die For" Pimento Cheese

1 lb extra sharp cheddar cheese
1/2 lb Monterey jack cheese
3 medium kosher dill pickles, minced
2 cloves of garlic, minced
1 4 oz jar of diced pimentos, drained
Mayonnaise to taste

Hand grate the two types of cheese and add the remaining ingredients and mix well - add as much or as little mayo as you like - I prefer just enough to make it moist. Serve with bread as sandwiches, or put on celery sticks or crackers.
