Chef Audrey's Whole Wheat Linguine

Ingredients:
1 white onion, chopped 1 red pepper, chopped 2 zucchini, chopped 2 summer squash, chopped 1 eggplant, chopped ½ bunch asparagus, cut in 2 inch pieces 2 oz olive oil ½ t salt ½ t black pepper 1 oz garlic, chopped 1 oz dried basil ½ dried oregano

Method: Roast all vegetables in oven @ 350 degrees for 15-20 minutes
1 box whole wheat linguine, cooked 1 tomatoes, chopped 2 oz fresh basil, 2 oz fresh chives, chopped 2 oz fresh parsley, chopped Italian Blend cheese, grated White Wine Heavy Cream 8 oz

Method In sauté pan, add tomatoes, with white wine...over medium heat for 3 minutes, add heavy cream.....allow to simmer until cream thickens, in another bowl add roasted vegetables and linguine, fresh herbs, toss --pour cream mixture over, toss again.....plate pasta... top with grated cheese.
