Egg Salad Veggie Wrap

6 eggs, hard-cooked, shelled and chopped

¼ teaspoon salt

¼ teaspoon black pepper

½ cup cucumber, peeled and chopped

1 cup plum tomatoes, chopped

¼ cup red onion, chopped

½ cup packaged cooked bacon, chopped

1/4 cup mayonnaise

2 tablespoons light honey mustard dressing

6 lettuce leaves

6 (6inch) whole wheat tortillas

In a large bowl combine eggs, salt, pepper, cucumber, tomatoes, onion and bacon. Fold in mayonnaise and honey mustard dressing.

Place a lettuce leaf on a tortilla. Spoon about ½ cup egg mixture on top of lettuce. Roll up tortilla and cut into half crosswise.

Makes 6 servings
