Grits (follow directions on package to make enough grits for 3 servings - should be about 4 cups water and 1 cup grits - depends on which brand you get)
1 lb. Ground pork sausage
1 large Onion (chopped fine)
1/3 Bell Pepper (chopped fine)
3 or 4 Cloves of Garlic (minced)
Chopped peppers (use fresh or canned. If you use canned, rinse the vinegar off.
Use whatever kind of peppers you like, as much as you like.)
Seasoning Mix to taste (use prepared mix or mix salt, red pepper, white pepper,
½ lb grated Mozzarella Cheese
1 cup Flour
1/3 cup Milk
½ lb grated Cheddar Cheese
Make a bunch of grits. Use real grits, not instant. After they have cooled a little, pour them into a large mixing bowl. Brown sausage, drain. Add to grits. Sauté onion and bell pepper. Add to grits. Add garlic, peppers, seasoning to grits. Stir in mozzarella cheese and eggs. Add flour and milk. Stir very, very thoroughly.
Pour into greased casserole dish. Bake at 350 degrees until done. (No I don't know how long that will take. Test in the center like you would a cake.) Put shredded cheddar cheese on top after you remove from the oven. Let sit until cheese melts.
