Poached Eggs

3 inches cold water
T white vinegar
Herbs ( optional)
Eggs large - room temp 6

Method: using a sauce pan, heat water to boil, turn down allow to simmer, add vinegar, using a ladle break egg and pour into water one at a time...2 ½ - 3 minutes - poach ONLY 2 eggs at a time.... When they are done, remove eggs from water with slotted spoon, place eggs on kitchen towel.... Serve over Sweet Potato Hash, other options ... English Muffin...
